Mix Together Pumpkin Cookies:
1 Cup Almond or Peanut butter
1 Cup of Pumpkin puree
1 Cup Unrefined Coconut Sugar
1 Cup of Uncooked Rolled oats
1 1/2 Cups of Almond Flour
4 TBS Maple Syrup
4 TBS Almond or Coconut Milk
2 Tsp Vanilla extract
1 Tsp Baking soda
1/2 Tsp Salt
2 Tsp Pumpkin pie spice
Bake cookies for 15-17 minutes at 350.
Make Coconut Cream Topping:
Put in fridge overnight 1 Can Coconut Cream (non-sweetened).
Add Coconut Cream, 2 TBS Maple syrup, 1 tsp Vanilla
Blend with a mixer until thick
Place back in the fridge until the cookies cool.
Add to cookies, then sprinkle with cinnamon.
