PUMPKIN OATMEAL Cookies with Coconut Cream Topping

Gluten-Free/Vegan, Refined Sugar-Free

These Pumpkin Oatmeal cookies are ever so satisfying and include key elements to support your health- Protein, Healthy Fat, Fiber, and nutrients. The best part, they are delicious, and you won't even miss the Gluten, Dairy, and Refined sugar. Eat well, friends!

Mix Together Pumpkin Cookies:

  • 1 Cup Almond or Peanut butter

  • 1 Cup of Pumpkin puree

  • 1 Cup Unrefined Coconut Sugar

  • 1 Cup of Uncooked Rolled oats

  • 1 1/2 Cups of Almond Flour

  • 4 TBS Maple Syrup

  • 4 TBS Almond or Coconut Milk

  • 2 Tsp Vanilla extract

  • 1 Tsp Baking soda

  • 1/2 Tsp Salt

  • 2 Tsp Pumpkin pie spice

Bake cookies for 15-17 minutes at 350.

Make Coconut Cream Topping:

  • Put in fridge overnight 1 Can Coconut Cream (non-sweetened).

  • Add Coconut Cream, 2 TBS Maple syrup, 1 tsp Vanilla

  • Blend with a mixer until thick

  • Place back in the fridge until the cookies cool.

  • Add to cookies, then sprinkle with cinnamon.
