Healing Carrot Ginger Soup
1 T Olive oil
1 Yellow onion chopped
5 cloves of garlic minced
2 inch piece of fresh ginger, peeled and grated.
1 lb carrots, chopped
1 quart vegetable or chicken broth
Salt & Pepper
Heat oil in a large pot over medium heat. Add onion and stir 1-2 min. Then, add garlic and ginger and stir for 1-2 minutes. Next, add carrots, vegetable broth, salt & pepper. Bring to a boil, then simmer for 25 minutes until carrots tender.
Transfer to a blender on high until smooth. *Eat with protein of choice.
