This Carrot Ginger Soup is an ideal choice when you're in the mood for a creamy, nourishing, quick, and easy soup. Ginger is well-known for its anti-inflammatory properties and immune support, besides offering a little spice to the soup. Carrots are rich in beta-carotene, which is converted into vitamin A by your body and promotes good vision. This nutrient is also essential for growth, development, and immune function. Carrots are a great source of antioxidants and fiber, as well as several B vitamins, vitamin K, and potassium.
