HONEY DIJON KALE SALAD

This may be your favorite new Salad! Simply roast the vegetables in the oven, mix the dressing, and add chopped Kale, freshly sliced radishes, pumpkin seeds, and Protein of choice. I added wild-caught shrimp and pumpkin seeds as they contain significant amounts of Zinc and Magnesium, among other supportive nutrients. Magnesium is responsible for over 600 enzymatic responses in our body, including energy conversion, DNA repair, muscle contraction and relaxation, and nervous system regulation. Zinc is a powerful, immune-supporting essential trace mineral that assists in gene expression, wound healing, growth, and more.



Dressing

2 tbsp Dijon mustard

3 tbsp Honey

2 tbsp Tahini

2 tbsp Apple cider vinegar

1/2 cup Olive oil


Roasted Vegetables of choice (I used Cauliflower and Yam, then added fresh radishes and pumpkin seeds).

Toss in Olive oil, Paprika, a bit of Chili Powder, Salt and black pepper.

Optional Add: Protein of choice
