Healthier Chinese Orange Veggie/Chicken/Tofu Stir-fry

This Healthier, Gluten & Dairy Free version of Orange chicken is perfect for the entire family. If you don’t eat chicken, it’s delicious with veggies, or add Organic Tofu plant protein. Go ahead and switch out the veggies as desired, but I will list what I used.


Stir-fry ingredients:

1/2 Yellow onion diced

2 Garlic cloves minced

1 Red Bell Pepper sliced

1 C Chopped Broccoli

1.5 C Halved Green Beans

1/2 C Cashews

1 Pound of Chicken or Tofu Chopped


Sauce:

1 1/2 C freshly squeezed orange juice

Zest from 2 oranges

1 TBS Grated ginger

3 TBS Honey

6 TBS GF Organic Tamari Sauce

2 TBS Arrowroot starch


Preheat a skillet, add 1 TBS avocado oil, cook Chicken or Tofu, and set aside.

While the Protein is cooking, sauté onions and garlic for 3-4 minutes, then add all other Stir-fry ingredients for another 10-12 minutes.


While the veggies are cooking, make the sauce. Pour the sauce into the veggie dish with the Protein and cook for another 5-8 minutes.


Pour stir-fry over rice or cauliflower rice and top with green onions and sesame seeds.
