Grilled Salmon w/Dairy-free creamy Caesar Dressing

This salad is packed with nutrients and antioxidants! So much that you will finish thinking you don't need to refuel your body for days from feeling nourished and fulfilled from all the flavors! The roasted Chickpeas and the creamy Gluten-free dressing provide extra protein.


GRILLED SALMON

Heat grill to Low/Med

Coat the top of the Salmon with Dijon Mustard

Add seasonings as desired

Place directly on the grill (skin side down)

Cook for 20 minutes


SALAD DRESSING

Add all ingredients to a mixer/blender

1 Tsp Dijon Mustard

1 clove of garlic

1/4 C tahini

3 Tbs lemon juice

1 Tsp capers & 2 tsp caper juice

3-6 Tbs water to thin as desired

Salt/Pepper


ROASTED CHICKPEAS

Place 1 C Chickpeas on a sheet pan

Drizzle, coat, and toss with olive oil

Season with salt, pepper

I also love adding Redmond's Seasonal Salt.

Cook at 350 in the oven for 20 minutes.
