Fresh Spring Rolls with GF Peanut Sauce

Add these to your quick, easy, fresh, and delicious meal lineup! These Spring Rolls are an excellent way to get your rainbow 🌈 Veggies in. Each veggie provides different antioxidants, vitamins, and minerals, so aim for a variety throughout the week to reap the benefits.

Thinly slice veggies of choice, but here is what I use:

Sweet Peppers

Cucumber

Carrot

Avocado

Purple Cabbage

Mint


Mix Sauce:

1/2 C Peanut Butter

4 Tbs Rice wine vinegar

4 Tbs GF Tamari or Coconut Aminos

2 Tbs Maple syrup

2 Tbs Sesame or Olive oil

1 Tsp minced garlic

1 Tsp finely shredded ginger

2 Tbs Water


Add Cooked Tofu, Shrimp, or Chicken if desired.
