Crunchy Beet & Quinoa Salad

I canโ€™t decide if itโ€™s the pistachios, apples, pomegranates, or beets that make this salad so satisfying, but this Immune supportive salad is full of flavor and texture.

โ–ซ๏ธGreens of choice

โ–ซ๏ธ1 C cooked/chilled Quinoa

โ–ซ๏ธ1 C gala diced apples

โ–ซ๏ธ1 C cooked diced beets

โ–ซ๏ธ1/4 C pomegranates

โ–ซ๏ธ1/2 C finely chopped pistachios

* I also add cooked yams sometimes


๐ŸŠ๐–ข๐—‚๐—๐—‹๐—Ž๐—Œ ๐–ฃ๐—‹๐–พ๐—Œ๐—Œ๐—‚๐—‡๐—€

3 Tbs freshly squeezed orange juice *I like to add the pulp for more fiber.

2 Tbs apple cider vinegar

1 Tsp Dijon mustard

2 1/2 Tbs olive oil

Orange zest of 1 orange

Salt/pepper
