I canβt decide if itβs the pistachios, apples, pomegranates, or beets that make this salad so satisfying, but this Immune supportive salad is full of flavor and texture.

β«οΈ1 C cooked/chilled Quinoa
β«οΈ1 C gala diced apples
β«οΈ1 C cooked diced beets
β«οΈ1/4 C pomegranates
β«οΈ1/2 C finely chopped pistachios
* I also add cooked yams sometimes

3 Tbs freshly squeezed orange juice *I like to add the pulp for more fiber.
2 Tbs apple cider vinegar
1 Tsp Dijon mustard
2 1/2 Tbs olive oil
Orange zest of 1 orange
