BUTTERNUT SQUASH BLACK BEAN SOUP

FALL SOUPS ar𝖾 𝗁𝖾𝗋𝖾 𝖺𝗇𝖽 π—π—π—‚π—Œ Vegan/GF Butternut Squash Black Bean soup is divine, simple, and full of supportive nutrients, fiber & antioxidants to support your immune system heading into the seasonal change.🍁🍁🍁

One pot soup:

▫️Peel and cube 1 Butternut Squash

▫️Sautee in olive oil for 3 min:

1 chopped onion

1 chopped red pepper

3 cloves minced garlic

▫️ Add and sautee for 10 min:

Butternut squash

1/2 Tsp Thyme

1/4 Tsp Cayenne pepper

Salt/Peper

▫️ Add and cook for 20 min:

1 1/2 C Cooked Black beans

1 can of Coconut milk

3 C Vegetable Stock

▫️ Add 1 C Chopped Kale

Enjoy it as soup or over rice!!!🍲
